Ulrike cooks: Our new favorite pizza - with sweet potato dough

Sweet potatoes are something I just can not get enough of. Since I'm probably like many of you, since the superfood has conquered the German kitchen. Whether in the form of sweet potato fries, as sweet potato toast, as soup or fried in a spicy curry? they always taste really good! Accordingly, I was excited when I first heard of sweet potato pizza.

I was inspired by the Foodistas, whose recipe for sweet potato pizza with wild garlic pesto and watercress inspired me. And I can only say: It is a pleasure! And even without a guilty conscience, because this pizza is? Sweet potatoes thank you? relatively low in calories.

Unlike the sweet potato toast, not only are slices of exotic potatoes used as the ground for the pizza, but we puree the superfood and mix it with two different types of flour. In this way, a mushy dough, which spreads nicely on the sheet, baking crispy and then deliciously produced.

And that's much easier and faster than you think. In addition to the pureed sweet potatoes, I use normal wheat flour and maize flour in a similar ratio for the dough. Who likes, can? like the foodistas? also use lentil flour, but because I usually do not use that, I have decided on a flour that I already have in the kitchen.

Sweet potato pizza with homemade pesto

Only then alone would the pizza be very dry. Tasty, but too dry. That's why homemade pesto comes on top. Of course, you can also use a finished pesto verde, but this rocket pesto is made so easy and fast that it's almost not worth it.

Especially since you do not need the whole amount for the pizza and the pesto can still be used excellently as a spread or for pasta. In a jar, it also lingers in the fridge for a few days. Now the sweet potato pizza with fresh ingredients according to your mood, mozzarella and in the oven with it.

I love Pizza Caprese and therefore just use fresh cocktail tomatoes, which, with their pleasant sweetness, are a nice contrast to the pesto. Sprinkle fresh watercress on top and just enjoy.

Including baking time you should plan about one hour for the preparation. While the potatoes are cooking, you can already prepare the pesto, and when the pizza dough is baking in the oven, you cut the ingredients for your favorite toppings. If you use finished pesto, of course, it's a bit faster.

My conclusion: A super delicious alternative to the classic pizza, which makes a lot of effort, with your guests for enthusiasm? and yet prepared so quickly and easily that you just want to do it again and again. I love her!
