Ingredients:

1 whole chicken, 1/2 cup freshly squeezed lemon juice, 3 lemons (one sliced ​​as a deco), 1 teaspoon coarse sea salt, 1/2 teaspoon fresh pepper, herbs for garnish (4 rosemary sprigs, 4 sage twigs, 8 Thyme branches and a bunch of parsley leaves)

Preparation:

Place the grate in the upper third of the oven and heat it to 200 degrees Celsius. Free the chicken from all offal and rinse thoroughly with cold water. Let it drain in a sieve.

Dab the chicken with kitchen roll, place it with the breast down in a medium sized pan (must fit on the grate) and sprinkle it with the lemon juice inside and out. Season it with salt and pepper.



Stitch with a fork in two of the lemons holes and put them deep in the cavity? if a lemon sticks out of the opening for space reasons, that's OK.

Put the chicken in the oven and reduce the temperature to 180 degrees Celsius. Let it cook uncovered for 15 minutes.

Take the pan out of the oven, turn the chicken over (chest up) and use a meat thermometer (best in the thigh). Wait for about an hour until the meat thermometer shows about 80 degrees Celsius, and the meat juice is clear when you pikst in the thigh.

Let cool for 10 minutes, then disassemble the roast.
Now that secret: Pour the cut meat with the lemon sauce from the pan? THAT is the 'marry me juice'. Garnish the meat with the fresh herbs and lemon slices.
