Whether sausage or wiener sausage: Many sausages end up with this small notch of unknown origin. But where does the sausage kink come from?

Hanging up ensures the kink

The sausages are made from so-called sausage meat, a mass of minced meat, fat, salt, spices and water. This mixture is finally filled mechanically into sheep intestines in portions - and then hung over a stick. You guessed it: In this process, the sausages hit the bar, which is ultimately responsible for the kink. After hanging, the sausages are steamed and smoked so that the included sausage is solidified and cut firm. So the score remains in the final sausage state.
