Ingredients for two loaves of white bread
1 cube of fresh yeast (42 g), 850 g of flour (type 550), 1 1/2 of sea salt, 5 tablespoons of milk; a lot of flour to work on; Fat for the forms
Bake white bread - that's how it works
to make dough
Put the flour and salt in a large bowl. Mix crumbled yeast and 5 tablespoons of water in a small bowl until smooth.
Stir dough until smooth
Add yeast water and 550 to 600 ml of lukewarm water to the flour and stir with a wooden spoon to a smooth dough.
Do not knead the dough!
The dough is stirred with a wooden spoon and not kneadedbecause he is very wet. So the dough gets a loose structure and elasticity.
Let dough go
Cover the dough with cling film and leave in a warm place for at least two hours. Carefully remove the foil.
Knead dough
Briefly knead the dough on a well-floured work surface and halve. Grease two box molds (contents 1.5 liters, 25 cm in length.) Take best black tin box molds - black plate conducts the heat better, resulting in a more beautiful baking result than tinplate) and put in one half of a dough. Covered and let it rest for at least 1 hour. Preheat oven to 200 degrees, convection 180 degrees, gas level 4.
Cut in dough and bake
Cut the dough surface diagonally and spread with milk. Through the cuts, the bread gets its typical wavy surface. The milk makes the crust shine beautifully. Bake the bread on the bottom rail in the oven for about 40 to 50 minutes.
Let white bread cool
Take out, loosen the loaves from the box molds and place on a wire rack let cool completely.

For fresh bread in the morning: Make half the amount of dough (see first page) and form into eight rolls. Place on a baking tray covered with baking paper. Cover the rolls covered in cold overnight.
Cut the buns in half with a dough card the next morning (then there are 16 baguette rolls). Cover with milk and sprinkle with poppy seeds. Put rolls in the cold oven. Heat to 200 degrees, convection 180 degrees, gas level 4 and bake for about 20 to 25 minutes in the oven. If the rolls are baked together, tear apart at the seam.
If the baking sheet does not fit in the fridge, take another firm base and pull the bread rolls with the baking paper onto a baking sheet for baking.
