Rüblikuchen with mini carrots

Making rübli from marzipan itself

If you want, you can make the marzipan carrots for the Rüblikuchen yourself.You need that for:

  • 200 grams of marzipan paste
  • some powdered sugar
  • Food coloring (red and green, possibly yellow)

Simply knead the raw mixture with the powdered sugar (binds the liquid color to the marzipan) and then knead about 1/8 of the mass for the leaves with green food coloring and the remaining 7/8 with red food coloring.

If the deco carrots turn red, you can mix a bit of yellow food coloring underneath until they get the color you want. Should the mass become too liquid, simply add some powdered sugar.



Now form the mass into small rolls, bring into carrot form, form the leaves and press on top. Carve notches in the carrots with a small knife or toothpick. Then place to your heart's content on the Rüblikuchen.
