Rye layer cake

This layer cake comes from South Jutland, Søderjylland, the part of Denmark bordering Germany. The region is famous for its lush coffee tables. Not infrequently, a buffet with more than 20 cakes and pies is set up. And you expect the guest to really try everything ... The hostess will watch over it! The cakes and tarts are served in a specific, fixed order - this is old cake tradition. For this cake you need two springforms of 24 cm diameter. If you have only one, simply bake the bottoms one after the other.

Honey was used for baking even before sugar was widely used in northern Europe. Honey cake has been known in Scandinavia for over 200 years. The most famous are the honey cakes from Christiansfeld, a small town in Denmark. There are still baked honey cake and honey hearts with chocolate glaze, which are named after the city. For the author Trine Hahnemann honey cake is one of the winter delights. She likes to enjoy a piece of tea in the afternoon with a cup of strong tea. If you do without the butter cream, you can eat the cake as bread: in the morning a slice - toasted with butter - simply delicious.

This easy to prepare cake is part of the traditional coffee table, because everyone likes it! As a child Trine Hahnemann liked to bake this cake, because not much could go wrong. The almonds make it wonderfully juicy and still tastes a few days after baking, especially when it is dipped in coffee. This basic recipe can be varied as desired. You can mix finely grated citrus peel, dried fruit or cocoa powder.
