Healthy cake can be so delicious

Plum cake sweetens us the start of the autumn - and this specimen with crispy shortcrust pastry and golden baked curd mass looks so deliciously appetizing that we would like to invite you immediately to Veronika from the blog "Carrots for Claire" for coffee.

The recipe shows that the cake can not only visually convince. Especially for allergy sufferers and people with food intolerances worth a second look, because the cake is gluten-free and lactose-free. Instead of butter, the shortcrust pastry contains almond paste and grated almonds, instead of egg, chia seeds provide for binding. There is no sugar in the quark cream, but only 1.5 to 2 tablespoons of maple syrup - the plums bring enough sweetness into play. A healthy thing, then.

Valuable foods instead of "empty" ingredients

Cheese cake with butter-free almond chia shortbread and plums is just one of many quick, easy and healthy recipes on Veronika's Carrots for Claire blog.

Veronika began to engage more intensively with the topic of healthy nutrition because of her daughter Claire. Claire suffered as a baby with intolerances to cow's milk products and flavor enhancers. In addition, Veronika wanted to offer her daughter "instead of bad fats, factory sugar and 'empty', ie nutrient-less ingredients" rather "valuable food," as she writes.

The logical consequence: a change of diet for the whole family. Today, Veronika cooks and bakes fully, with little fat, healthy sweetness and often without eggs - and so are the recipes in her blog. Claire is now two and a half, eats almost all vegetables and does not make much of sweets. And Veronika? Now weighs 13 pounds less than before her pregnancy and could even inspire her husband for vegan dishes.
