The best barbecue marinade is homemade

Marinade for shrimp and fish:

(for 12 king prawn tails with shell or for 4 salmon chops)

  • 2 cloves of garlic
  • 1 small piece of ginger (about 20 g)
  • 1 lime
  • 2 tablespoons rapeseed oil

Preparation:



  1. Remove garlic. Peel ginger, press garlic and ginger through a sturdy garlic press. Rinse lime hot and rub dry. Rub the peel and squeeze out the juice.
  2. Stir oil, garlic, ginger, lime juice and peel and pour over the rinsed shrimp (or over the fish ready to be cooked). Let it soak in the fridge for about 1 hour.

Grill marinade for lamb, beef and pork (for 4 rump steaks):

  • 200 ml of dark beer (buck or malt beer)
  • 2 tbsp white wine vinegar
  • 3 Tl mustard
  • 1 tsp honey

Preparation:

  1. Stir beer, vinegar, mustard and honey.
  2. Cut the fat edge off the rump steaks and place the meat in the marinade. Leave to cool and let it strain for about 4 hours.

Grill marinade for poultry (for 4 chicken fillets):

  • 4 stalks of mint
  • 3 spring onions
  • 2 tablespoons of lemon juice
  • 200 g of yogurt
  • Cumin (cumin)

Preparation:

  1. Rinse mint, shake dry, peel off leaves and cut into strips. Clean the spring onions, rinse and cut into rings.
  2. Mix lemon juice, yogurt, 1 Msp. Cumin, mint and spring onions. Pour meat with the marinade and chill. Run for about four hours.

General remark: After marinating, dab the meat, the poultry, the fish or the shrimp a bit, season with salt and pepper and grill on the charcoal or electric grill. Or fry in a pan in a little oil.

Marinating grilled meat: That's how it works

There is much to suggest that you do not buy pre-marinated meat, but marinate the meat yourself. For example, with your homemade barbeque marinade, you can try exciting new flavors without having to settle for the 0815 "pork neck in paprika marinade" from the supermarket.

Important: If in a grill marinade all four flavors salty, sweet, bitter and sour are included, the mixture is optimal. But a main ingredient should set the tone.

That's how long your meat has to marinate

Poultry, lamb, pork and thin beef slices about four to eight hours, large pork and beef pieces for up to twelve hours in the grill marinade. Shrimp and fish strips at most 30 minutes, whole fish fillets marinate for about an hour. No more: the tender fish meat would otherwise become too crumbly and the aroma too strong.
