Scrambled eggs: the basic recipe
The basic mix for 2-3 persons and all our scrambled egg recipes:
- 4 eggs
- 8 tablespoons milk or whipped cream
- salt
- freshly ground white pepper
Whisk everything in a bowl with a whisk.
To make classic scrambled eggs
- Make basic mixture for scrambled eggs.
- Put 2 teaspoons of butter in a coated pan and heat.
- Add the whisked eggs and let it stand at low heat. In between, gently stir with a spatula along the bottom of the pan until the liquid egg is creamy. Attention: The scrambled eggs should not turn brown, because it is then dry!
Scrambled eggs with ham and onion cubes
Make basic mixture for scrambled eggs. A small diced onion in 2 teaspoons butter until glassy, do not brown. Add 30 g diced ham and the base mixture and let it falter as with the classic scrambled eggs. A gherkin spice up the whole thing. Tasty with jacket potatoes!
Scrambled eggs with rocket and parmesan
Rinse some stalks of rasp (20 g), clean them and cut them if necessary. Stir the basic mixture as with the classic scrambled eggs in a pan with 2 teaspoons of butter. After half of the time add the rocket and 40 g of freshly planed Parmesan cheese. The scrambled egg with rocket and parmesan goes well with baguette!
Scrambled eggs with peppers and garlic
Make basic mixture for scrambled eggs. Clean a red pepper (250 g) and cut into pieces. Fry in 2 teaspoons hot olive oil for about 3 minutes until light brown. Add a crushed garlic clove and the ground mixture, as in the classic scrambled eggs and serve to fried potatoes.
Scrambled eggs with mushrooms and spring onions
Make basic mixture for scrambled eggs. Clean and slice 100 g mushrooms. Clean a small spring onion and cut into thin rings. Steam the mushrooms in 2 tablespoons hot butter for about 2 minutes. Add the leek onions, sauté briefly and season with salt and pepper. Add the basic mixture and let everything falter as with the classic scrambled eggs. Rustic bread is enough.
Scrambled eggs with smoked trout and chives
Make basic mixture for scrambled eggs. Cut 100 g trout fillets into pieces and 1/2 bunch rinsed chives in rolls. The base mixture in 2 teaspoons of butter as in the classic scrambled eggs falter. Just before the end of cooking, sprinkle fillets and chives over the scrambled eggs. Ideal for brunch, for example with wholegrain bread.
