Pumpkin vegetables as a side dish: the ingredients

  • 900 grams of pumpkin (we recommend Hokkaido pumpkin, but you can of course use other pumpkin varieties)
  • 100 grams of carrots
  • 1 big potato
  • 1 onion
  • 1 clove of garlic
  • 200 ml sour cream
  • 200 ml of water
  • 1 tbsp olive oil
  • 1 tsp powder for vegetable broth
  • salt
  • pepper

The amount refers to a portion for 4 people.

Pumpkin vegetables: the preparation

  1. Peel pumpkin? unless you use Hokkaido. Then it is enough to wash it thoroughly. To dice.
  2. Peel onions, garlic, potatoes and carrots and cut into small pieces.
  3. Heat the oil in a pan and sauté the onion and garlic. Add the powder for the vegetable broth and roast.
  4. Stir in carrots and potatoes and also roast for a short time. Add the pumpkin meat and stir fry for 5 minutes. Deglaze with the water and then boil the vegetables briefly.
  5. When the pumpkin is soft-boiled, lightly crush the meat with a potato masher. Do not make mushy puree, but rather let the pumpkin greens lumpy.
  6. Stir in sour cream and simmer for a few more minutes. Season with salt and pepper and serve.

Tips for delicious pumpkin vegetable variations

There are countless ways to vary this recipe. You can, for example, stir in tomato puree and season the pumpkin with caraway, dill and pepper, or simply chop tomatoes and season with lemon juice.



Other fruits and vegetables are also available to give the pumpkin a new touch. Apple and shallots, for example, are great with ginger and lime. With a touch of cayenne pepper it gets wonderfully exotic. Also chickpeas are always a good companion for pumpkin vegetables.
