Stuffed cannelloni: Vegetarian good

The term cannelloni goes back to the Italian word "cannello" - that means something like "tube". In fact, cannelloni are thick pasta tubes made of durum wheat. Cannelloni are stuffed with meat, fish or vegetables and baked in the oven with tomato sauce and bechamel sauce. This makes the filled cannelloni something of the little sister of lasagna - and one of the highlights of the Mediterranean cuisine.
Traditional is a filling with Ragu alla bolognese - our delicious variation: vegetarian filled cannelloni with ricotta and spinach. We will show you step by step how filled cannelloni succeed!

Variety in the tube: recipe ideas

The Italian classics are made from hardwheels of dough, which are rolled up into tubes. In principle, they are nothing but pasta, so pasta that you can fill at will. Traditionally, this is a filling with Ragu alla Bolognese, but there are so many other variants. In addition to the vegetarian filling that we present here - filled cannelloni with ricotta and spinach - you can also fill the cannelloni with many other types of vegetables, cheese, meat and fish.

Zucchini, tomatoes and cream cheese, for example, are also suitable for filling at any time. If you want to experiment a bit, you can find pumpkin hack cannelloni in our recipe database for fall. In winter, however, you can fill the tubes with savoy cabbage. How to do it, we show you in the recipe for savoy cannelloni. For the summery light taste try our cannelloni with basil pesto. Just experiment with the ingredients that you like and try different vegetables.

Make filled cannelloni yourself

In our recipe below, we show you step by step how to make filled cannelloni. We use fresh spinach, which is filled with onions, ricotta, mascarpone (or cream cheese), salt and pepper in the tinfoil. We use ready made cannelloni noodles to keep the effort as low as possible. From vegetable broth and milk, we cook a tasty sauce in no time, with which the cannelloni are poured over before they are sprinkled with Parmesan for baking in the oven. Just delicious!

Incidentally, those who prefer vegan can replace mascarpone or cream cheese with silk tofu. It has a fine, creamy texture and is great as a substitute.
