Low carb pizza dough with cauliflower

We love pizza! And thanks to this low-carb pizza dough, we can enjoy it more often than before without a guilty conscience.

Pizza and low carb - how does that work? Pizza dough is usually prepared with flour - in the mixture with the fat from cheese and Co. there is a lot of calories together. In our recipe from the ChroniquesDuVasteMonde kitchen we use flour instead of cauliflower. This gives our pizza dough an extra portion of vegetables and saves a lot of carbohydrates.

If we now cover our low carb pizza base with healthy ingredients such as tomatoes, peppers, spinach, broccoli, mushrooms and other vegetables, nothing stands in the way of the pizza treat without regret. But even salami and ham fall in the low-carb pizza base not as strong as in a carbohydrate-rich pizza variant with a normal pizza topping.

So if you want to lose a few pounds, but still feel like pizza, with the low-carb pizza can not go wrong. Ingredients for a low carb pizza dough with cauliflower (for 2 persons):

  • 400 g of cauliflower
  • salt
  • 150 g Gouda, Emmentaler or pizza cheese
  • 2 eggs (M)
  • pepper

Making low carb pizza dough with cauliflower - how it works:

Preheat oven to 200 degrees (convection 180 degrees). Clean the cauliflower and peel the stalk. Finely chop the cauliflower florets and stalk or finely grate them in the food processor. Cover baking tray with baking paper and spread on it. Salt lightly. Cover with a baking paper and cook the "dough" on a medium rack for about 10 minutes. Remove the cauliflower from the oven and allow to cool.

Rub the cheese. Put 150 g of cheese in a bowl and mix with the two eggs and a little pepper. Mix the lukewarm cauliflower under the cheese.

Cover the baking sheet with baking paper and form two pancakes from the cauliflower-cheese dough and bake in the oven on a medium rack for about 10-15 minutes until the dough is almost cooked.

To make a real pizza out of the dough, coat the cauliflower pizza base to your heart's content with ready-to-use tomato sauce (glass) and top up with various ingredients (eg paprika or zucchini strips, salami, tuna, mushrooms, tomatoes, corn) Sprinkle the end with a little cheese (about 50 g). Bake the pizza in the oven for about 8 to 10 minutes.
