Hard shell, great core

The walnut is extremely versatile on the outside: green walnuts, also called peeled nuts, are fresh undried nuts. Then there is the walnut still peeled and chopped in the varieties and of course in shell. On many Christmas cookies walnut halves are the culmination. Its strong nutty flavor harmonizes with cheese, poultry and vegetable salads as well as exotic dishes.

The Germans are enthusiastic self-cracker. While in America, 90 percent of walnuts are sold without a shell, we only have 10 percent. Because many nutcrackers suffer from jaw fracture, there are special walnut openers, e.g. from mono.

Store properly, enjoy for a long time

Originally the walnut comes from Persia. The Romans also appreciated her and named her "Iovis glans" - the royal Jupiter nut. Meanwhile, the main growing area is in California. The most expensive nuts are supplied by the French, but they are of top quality and often come from organic farming.

Harvested in September and October. That means: From November, we have the fresh nuts. Properly stored they last up to a year. In the shell, walnuts should be stored in a cool place, dry and airy and best in the dark. Peeled nuts belong in the fridge, otherwise they quickly become rancid.



Strong against heart attack

Walnuts are not only good, they are good too. Because they contain an enormously high proportion of unsaturated fatty acids (75 percent). These unsaturated fatty acids help to lower cholesterol levels - thus reducing the risk of heart attacks. There are plenty of fiber and vitamin E in the fight against cardiovascular disease. Both ingredients help break down LDL cholesterol, which causes the formation of deposits on the arterial walls, thus narrowing the blood vessels.

If that's not enough, walnuts also contain the vitamins B1, B2 and B6, which promote concentration, as well as calcium - good for building bones and teeth. A slim waist does not provide the nut consumption. Dried kernels consist of about two-thirds fat and thus contain neat calories (about 650 calories per 100 grams).
