Gluten-free pancakes - enjoyment without remorse
Ingredients for gluten-free pancakes (2 portions):
For fruit pouring:
- 250 g blueberries (or other fruits)
- 1 tbsp lemon juice
- 2 teaspoons of sugar (for example coconut blossom or birch sugar)
For the dough:
- 1 egg (M)
- salt
- 75 g finely ground nuts (nutmeg mix) or sunflower pumpkin seed mixture
- 1/4 teaspoon tartar baking powder
- 50 ml of milk
- 1 - 2 tbsp oil for baking in the pan
Upon need:
- 150 g cream yoghurt or skimmed quark
- 2 tablespoons grated coconut
Bake gluten-free pancakes - how it works:
- For the fruit juice, boil the fruit with the lemon juice, 5 tablespoons water and 1 teaspoon sugar in a saucepan and simmer for about five minutes over low heat. Allow the fruit juice to cool lukewarm.
- Separate egg for the dough and beat the egg whites with a pinch of salt. Add 1 teaspoon sugar with stirring and stir for half a minute.
- Milled nuts (or a sunflower-pumpkin seed mixture to taste), baking powder, egg yolk and milk until smooth. Lift ice snow under the dough.
- Heat the oil in a coated pan. Divide the dough into six small portions and bake in the pan over medium heat from each side for about two to three minutes until golden brown.
- Put on a plate and pour over the fruit juice. Depending on your taste, add cream yoghurt.
If you like, you can also make the pancake dough with 60 g tofu. Also goes well with pancakes: grated coconut. Simply put 2 tablespoons under the dough.
