Entrecôte with Yorkshire pudding and remoulade sauce
To see what the meat is like, you can use a meat thermometer to measure the temperature in the flesh core.
Bloody (rare): 51-54 ° C
Medium: 60-65 ° C
Well-done: 76-85 ° C
Or you do the finger pressure test: the less the meat gives, the better it is cooked through. If it is as soft as the spot under the thumb, it is still bloody / rare. If it feels like the skin under the base of the finger in the palm, it is medium. The meat is well-cooked when it feels like the middle of the palm.
