Cutting peppers

For decorative peppers, place the pod on a platter, cut off the lid with a large chef's knife. Cut out white partitions and cores with a kitchen knife and cut the peppers into 5 mm thick rings.

Or cut the peppers in half lengthwise, remove the stem, dividing walls and seeds and cut the pod lengthwise into 2.5 cm thick strips. Cut out lozenges for vegetable dishes.

Halve the halves of the pepper, cut them into strips or cubes.
